3 tbsp honey
1/2 tsp dried thyme, crushed
1 small red onion, halved and sliced thinly
4 chicken breasts, grilled (you could also use 12 oz precooked sliced chicken)
Combine honey, thyme and red onion in medium skillet and cook over medium-low heat until just barely hot. Do not boil!
If you are using chicken breasts, spoon the honey mixture over the breasts for your sandwich. If you use precooked chicken, put that in the skillet with the honey mixture and heat through.
Slice your croissants in half and arrange your chicken in them. Enjoy!
Disclaimer: tonight, I’m using hamburger buns because it’s all I have in house. But I bet it’s much better on croissants.
