Menu Plan Monday: April 20

Had to redo this plan a little to include stragglers from this past weekend’s plan that didn’t get made. It was a little hectic here and things got changed. 🙂

Monday – fish tacos (from last week, got a bit caught up over the weekend with my daughter’s baptism)
Tuesday – breakfast for dinner, wake-up casserole (leftover Easter ham, yay!)
Wednesday – salmon turnovers (I’m scared of this one. Canned salmon has always scared me but everyone who tries it raves about how convenient it is. I will let you know my thoughts.)
Thursday – coq au vin (take 2, hopefully this will be better than my last “meh” attempt)
Friday – italian cold cut calzones (from last week)
Saturday – beef stroganoff (from last week)
Sunday – soup and grilled sandwiches
