BBQ Meatballs

So, it’s been a bit of a hectic day today. Didn’t get these started until about a half hour ago (it’s 7:30 now). I had a Lia Sophia party to attend and my daughter decided to have a complete malfunction on the way home, so she needed to eat first. suitNtie unexpectedly ate at his friend’s, so I was determined to cook this tonight because everyone raves about the Pioneer Woman and I’ve never tried a recipe of hers. I have high hopes. I need good sustenance after listening to ScreamFest 2009.

…I had a front row seat.

…not by choice.

Meatballs
1 1/2 pounds ground beef
3/4 cup oats
1 cup milk
3 tablespoons very finely minced onion
1 1/2 teaspoon salt
plenty of ground black pepper

Sauce (I made another 50% of this, I’m a sauce girl, I’d rather have extra than not enough)
1 cup ketchup
2 tablespoons sugar
3 tablespoons vinegar (should be white, I used apple cider b/c it’s all I had, we’ll see how it goes)
2 tablespoons Worcestershire
4 to 6 tablespoons onion
Dash of Tabasco

Preheat oven to 350 degrees.

Combine all meatball ingredients. Roll into medium-small balls and place on a cookie sheet. Place sheet in freezer for five minutes. Remove from freezer and immediately dredge in unseasoned flour.  (oops, I forgot to dredge…) Brown meatballs in canola oil until just brown. Place into a baking dish.  Combine all sauce ingredients. Pour over meatballs and bake at 350 degrees for 45 minutes.

  1. um…yeah. So I went into this not really sure what to expect. I mean, after PW’s entry on her site and how she described the otherworldly taste, I was skeptical but hopeful. I cut my first meatball in half and went in for it. It was good…but I was initially disappointed because of the work up.

    Strange. Less than a minute later, I was practically ready to marry these meatballs. There must be some sort of delay with my palate. 🙂

    I had mine with buttered egg noodles, but I was very upset that I had no mashed potatoes. They really should be served with mashed. So yes, make these. Make these now. Yum. suitNtie may have one. But that is it. MINE.
