Since this dish has previously been posted, I wanted to make sure I made a post so there were no assumptions that I was forgetting to blog again!
On days when I’m not trying something new, I’d like to hear from you. Today’s meal has a Mexican influence. Very often, I find myself falling back on the old taco-dinner-in-a box, fresh from the supermarket shelves. In recent months, I have fallen in love with shredded beef enchiladas, also, but they require significant pre-planning.
