Sam’s Zucchini Quiche

Got this recipe from my friend Sam… I had to stop eating this while I was nursing Miss Moo, but now that she’s done I am making it because I LOVE it. 🙂  Even if you are not a quiche fan, try this one because the consistency is different, note the use of two eggs only.

Crescent Roll dough 8 oz or heavy made pie crust (I use Pillsbury pie crusts)
(optional) spread dijon mustard very thin on crust
2 eggs beaten
1 cup chopped onion (i’m using shallots)
4 cups thin sliced zucchini (I use a mandolin)
1/2 tsp pepper
1/2 tsp salt
1/4 tsp basil
1/3 tsp oregano
1/4 cup dried parsley
8 oz shredded mozzarella cheese
2 tsp butter
Saute onion and zucchini in butter, add spices, pour in bowl with eggs and cheese, stir and pour into crust.  Bake at 350 until light brown, about 20-25 minutes depending on the oven!

  1. So, I put this in the oven at just after 3:30 in the afternoon because I love it so much. 🙂 And I was so excited that I mandolined my pinky finger when I was slicing the zucchini. Oh, well. I *love* this quiche. LOVE it.
