Wheatberry Salad with grilled chicken

I had a wheatberry salad a while back in a restaurant and I fell in love. Ever since, I’ve wanted to make one at home but the grocery stores that I shop in never seem to carry wheatberries. I finally saw this recipe and decided to hunt them down. It took me the better part of a day and four different stores before I found them. šŸ™‚Ā  I paired it with grilled chicken to round it out.

1 1/2 cups hard wheat berries
3/4 cup chopped walnuts
2 stalks celery, finely chopped
1/2 cup tart dried cherries, chopped
1 scallion, white and green parts, chopped
1/2 cup finely chopped parsley leaves
3 tablespoons olive oil
2 tablespoons lemon juice
Salt and freshly ground black pepper

In a large pot combine the wheat berries and enough water to come 2 inches over the wheat berries. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool. Toast the walnuts in a medium dry skillet over medium-high heat until fragrant, 2 to 3 minutes.

In a large bowl, combine the wheat berries, walnuts, celery, dried cherries, scallions, parsley, olive oil and lemon juice. Season, to taste, with salt and pepper.

    I like Ellie K’s recipes. I don’t get to catch her show as often as I’d like to.

  2. It was a small specialty store. Was kind of bummed that Shaw’s, Hannaford and Trader Joe’s didn’t carry them.

    This was good. suitNtie loved it. The chicken didn’t do anything for it, but I bet if I marinated it more in some lemon that it would have helped.

    I will definitely do another wheatberry salad, although I might try a different recipe next time. This, by the way, made a LOT. A mixing bowl full. šŸ™‚
