Breakfast for dinner tonight…yum!

I can’t really give you fried egg and bacon recipe. However, I can share with you what I do, very simply, to make homefries.

suitNtie would drink Emeril’s seasoning. Honestly. It goes on everything.

4 small red potatoes, washed and chopped into bite size
extra virgin olive oil
Emeril’s original Essence seasoning

I boil the cut potatoes in salted water until fork tender and immediately drain. I then toss them quickly in a bowl with olive oil and Emeril’s to coat and pour into a nonstick skillet to brown them.

These would be great with sauteed onions, but we prefer them as is. 🙂
