Extra, Extra! Maple Sausage Breakfast Casserole

I made a big ol’ tray of this today. Thanks to my friend Marie for sharing the recipe. She’d made it for a  brunch potluck and a baby shower and I fell in love.  Anything involving maple sausage is good in my book! Next time, I might sprinkle a little of my favorite seasoning into it as well…and see what happens. 🙂  FYI, with the photo, I did mine in two layers just to keep things interesting. So yours will probably look different!

8 slices bread, broken up (country white works well)
2 c. milk
salt and pepper to taste
1 log of Jimmy Dean maple sausage
9 eggs
2 c. mild white cheddar cheese, shredded

Broken bread goes into a 9×13 baking dish. Beat eggs, milk, salt and pepper together and pour over bread.

Brown sausage and then pour over egg mixture. Top with cheese and let sit overnight. In the morning, bake at 350 for about an hour or until cheese is bubbly.
