So, I was at the beach this summer and was talking with some relatives who were staying for the week (we were only there overnight). The woman I talked to, Laura, remembered that she had forgotten to put her chicken cacciatore in the crockpot that morning and had to run back to her cottage.
I was intrigued. You know me: I’m a sucker for anything in a crockpot. And cacciatore was never a part of my repertoire, because I absolutely despise bell peppers. However, suitNtie loves them. I asked her how she made it, and below is my interpretation. It went over very well in my household, and I always love finding a new use for my homemade tomato sauce.
5 c. homemade tomato sauce
1 tray sweet italian sausage (approx 6-8 links), browned and then sliced into 1/2 in. slices
3 green bell peppers, seeded and sliced
1 medium yellow onion, diced
3 split, bone-in chicken breasts, skin and visible fat removed
That’s it. Yup. Really, most of the work is done the day you make the sauce.
Mix onion and pepper into the sauce. put chicken breasts on top, and italian sausage over that. Stir once or twice during cooking, until chicken is about to fall off the bone. Remove chicken breasts and take all the meat off the bones, cutting into bite size pieces and putting back into crockpot. Combine throughly, serve over brown rice.
