So, I originally found this recipe in a mailer from BJ’s Wholesale Club. Of course, all the ingredients for it were sold there, but I made some substitutions (nothing that changed the ingredient list, really) and went for it.
This was excellent! I’ve been trying to work in whole grains and both my sister and suitNtie loved it. I can see this working nicely as a main dish but also as a side with some grilled chicken or pork. I think it would also be a great potluck dish! It held up very well for several days.
1.5 cups quinoa
2 cups low fat, low sodium chicken broth
1 14 oz can diced tomatoes
2 tsp. italian seasoning
1/2 tsp. salt
3 cups four bean salad. Try this one. BJ’s sells a big jar of premade, which I used, but the ingredients on this one look pretty close.
In a large saucepan, mix broth, tomatoes and Italian seasoning, bringing to a boil. Add quinoa and cook to package directions.
Stir in the salad and salt, cooking for a few minutes until hot.
