Menu Plan Monday: October 2012, Part 1

A heck of a transition into fall this year, for sure, but we are finally getting settled. suitNtie started his new job, Boo started Kindergarten, I started clinicals at the hospital…it took a few weeks for me to find my groove.  But it’s here- as evidenced by the handful of brand new recipes on the menu plan for the first half of October. I have high hopes!  I’m also looking forward to bringing in more fall veggies in the second half of the month. Roasted butternut squash and corn chowder, here we come! 🙂  Fall in New England:  a veritable bounty of awesome flavors.  Sigh.

Sunday family dinners have been a really nice addition to our week.  While we sit down every night to eat (minus my school nights, of course), it gets hectic as we are all distracted.  Sundays tend to be our most relaxing day- the kids are fresh from an afternoon at the local YMCA (swim lessons and free swim), I’m generally caught up on laundry and having a relaxing study session… so it’s been a nice time for us to regroup as a family.

  1. School Night:  Chicken Noodle Casserole (NEW!)
  2. Spinach & Chicken Stuffed Shells and salad (note:  I’ve since reduced the ricotta in this recipe in favor of more mozz, but otherwise it remains reasonably close to the original from ‘oh-ten)
  3. School Night:  FFY Buffet
  4. Turkey Sloppy Joes and oven fries (NEW!)
  5. BFD: Omelettes & toast
  6. FFY Buffet
  7. Sunday Dinner:  Chicken & Zucchini Rollatini (NEW!)
  8. School Night: Minestrone Soup  (from the cookbook that came with my Vitamix- we’ve had it before, I just didn’t put it up on the Kitchen!)
  9. Pizza Night:  Chicken Parmesan calzone
  10. School Night:  Peanut Butter Pork Tenderloin
  11. Shredded Beef Enchiladas
  12. BFD:  Pancakes & bacon
  13. FFY Buffet
  14. Sunday DinnerCrunchy Parmesan Chicken Tenders
  15. School Night:  Grilled Cheese Sammies
